Total preparation time: 1 hour
Ingredients
180g unsalted butter
1 cup brown sugar
½ cup icing sugar
1 1/4 cups cocoa powder
1/2 tsp baking powder
½ tsp baking soda
1 tsp salt
1 tbsp vanilla extract
4 large eggs
1 1/2 cups all-purpose flour
1 cup white or brown chocolate chips
Instructions
Preheat the oven to 180C. Prepare a baking dish of about 8 x 12 inches with parchment paper.
Melt the butter and brown sugar in the microwave. You can also melt in a pan on the hob. Allow to cool slightly.
Pour the butter mixture into a large mixing bowl, stirring in the cocoa, icing sugar, baking powder, baking soda, salt and vanilla extract.
Beat the eggs and whisk them into the mixture until a smooth consistency is achieved.
Sift in the flour and mix until combined well into a dough. Finally fold in the chocolate chips. Stir until smooth.
Pour the batter into the dish and bake in the middle rack on the oven for about 30-35 minutes. Test readiness by inserting a skewer in the centre until it comes out clean.
Cool on a rack for 15 minutes and slice into brownie portions.
