Simple but sizzling with Cosori air fryer summer spring rolls

So simple to prepare these using our Cosori air fryer summer spring rolls were a delight to serve!



These air fryer summer spring rolls are a cooler, rawer version of spring rolls and a great way to get your five-a-day into your food plan. The ingredients are simple and vastly depend on your preferences. Bright colours are preferred as they give quite a nice aesthetic.

To this effect, we prefer using red cabbage over green cabbage and like adding other colourful vegetables such as carrots and cucumbers. Adding some thin rice noodles gives these summer spring rolls a nice texture and is a nice addition.

Now, let’s take this up a notch. You like summer spring rolls and enjoy the fresh selection of vegetables and carbs, but how can we improve them? The answer is simple, welcome the Cosori air fryer, which gives these delicious snacks a crunchy exterior.


Rolling the Summer Spring Rolls

Prepare an easy peanut dipping sauce, and a few things can be better than that! This article will provide the summer spring rolls and peanut dipping sauce recipe. Summer rolls with a peanut dipping sauce only need under 20 minutes for preparation and cooking time.


Placing Summer Spring Rolls in Air Fryer

We prefer peanut dipping sauce with these summer rolls, but you can use whichever you prefer. The ginger and chili flakes kick this dipping sauce, which we enjoyed.

We also love hoisin and fish sauce with our air fried summer rolls. Other people have recommended mustard and mango chutney. It all depends on your personal preference. In any case, this must be one of the easiest recipes we've made!

This recipe makes 12 air fryer summer rolls. Here we go!


Summer Spring Rolls


12 Spring Roll wrappers

Rice Noodles

Red cabbage

Cucumber

Red onion

Carrots

Olive oil


Peanut dipping Sauce


2 tbsp smooth peanut butter

2 tbsp honey

2 tbsp rice vinegar

2 tbsp soy sauce

1 tbsp ground garlic

1 tbsp ground ginger

2-3 tbsp water

1 tsp chili flakes


Method


  1. Boil the rice noodles for three minutes in boiling water or as per the instructions on the packet.

  2. Put a large pot of water on high heat. You will use these for the spring roll wrappers.

  3. While the rice noodles boil, slice the red cabbage, cucumber, red onion, and carrots into thin slices. Drain the rice noodles.

  4. Lower the temperature of the large pot of boiling water to low heat. Dip the spring roll wrappers, holding them from one end and rotating them. Place the wrapper on a plate.

  5. Fill the spring roll wrapper with rice noodles, cabbage, cucumber, red onion, and carrots.

  6. Roll the Summer Rolls into a package. For an extra charge, wrap the Summer Rolls twice. Do the same for the rest of the Summer Rolls.

  7. Preheat the air fryer for 5 minutes

  8. Brush lightly with some olive oil. You can also opt for olive oil spray.

  9. Spray the air fryer basket with some olive oil

  10. Place 5 summer rolls (or whatever amount fits comfortably)

  11. Cook in your air fryer for 11 minutes at 180oC on one side

  12. While you wait for them to become golden brown, mix the peanut butter, honey, rice vinegar, soy sauce, garlic, ginger, and chilli flakes. Add the water according to your personal preference in thickness.

  13. Flip and cook for another 11 minutes at 180oC

  14. Serve immediately with a portion of peanut butter dipping sauce.


This version works best when two layers of spring roll wrapper are applied. Using just one spring roll wrapper might be very thin. We recommend an extra layer to prevent the Summer Spring Roll from breaking.
