Recipe:


For the Meat Sauce:

  • 2 tsp of Olitalia olive oil

  • 450 grams of minced beef chuck

  • 1/2 of a medium onion, finely chopped (approximately 175 ml)

  • 2 garlic cloves, finely minced

  • 1 can (800 grams) of premium tomato sauce

  • 85 grams of tomato paste (about half of a standard can)

  • 1 can (400 grams) of crushed tomatoes

  • 2 tbsp of freshly chopped oregano or 2 tsp of dried oregano

  • 1/4 cup of fresh parsley, finely chopped (preferably the flat-leaf variety)

  • 1 tbsp of Italian herb mix

  • A pinch of garlic powder and/or garlic salt

  • 1 glass of red wine

  • Sugar to taste (start with 1 tbsp and adjust as needed, up to 60 ml)

  • Salt to taste

To Assemble the Lasagna:

  • 225 grams of dry lasagna noodles (which is typically 9 sheets)

  • 1 packet of Colman's White sauce mix

  • 250ml of milk

  • 425 grams of cheddar cheese

  • 675 grams of mozzarella cheese, grated or thinly sliced

  • 115 grams of freshly grated Parmesan cheese

Method:


Prepare the Pasta Water:

Begin by boiling a large pot of salted water (1 tbsp of salt for every 2 litres).


Brown the Minced Beef:

Heat the olive oil in a large frying pan over medium-high heat. Add the minced beef and cook until it's evenly browned.


Cook the Vegetables:

Set aside the browned beef, leaving a tablespoon of fat in the pan. Sauté the diced onions until they're soft and the onions are translucent. Add the garlic and cook for an additional half a minute.


Create the Sauce:

Stir in the tomato sauce, tomato paste, and crushed tomatoes. Add the herbs, garlic powder, vinegar, and sugar, adjusting all to taste. Remember to account for the saltiness of the Parmesan cheese you'll add later.


Simmer the Sauce:

Let the sauce simmer on low heat for 15 to 45 minutes, stirring frequently.


Boil and Prepare the Lasagna Noodles:

Once the water is boiling, cook the lasagna noodles until al dente. Rinse with cool water after draining to prevent sticking, and drizzle with olive oil.


Preheat the Oven:

Set your oven to preheat at 190°C.


Prepare the white sauce:

Heat 250ml of milk and combine with your Colman's White Sauce mix, stirring continuously until thick and creamy.


Assemble the Lasagna:

In a 23x33 cm baking dish, spread a cup of the meat sauce. Lay down a layer of noodles, followed by a third of the remaining sauce, a layer of Colman's White Sauce mix and a sprinkle of Parmesan. Repeat the layers, finishing with noodles topped with sauces and cheeses.


Bake the Lasagna:

Bake for 30-40 minutes until golden on top.


Rest and Serve:
