How to make Ramen Eggs (Ajitsuke Tamago)

Preparing Ramen Eggs, also known as Ajitsuke Tamago, is a delightful way to add depth and flavour to your ramen. Begin by gently placing eggs in boiling water and cooking them for exactly 7 minutes until the yolk is perfectly runny. Immediately transfer the eggs to an ice bath to halt the cooking process. 

Once cooled, peel the eggs carefully. The magic happens in the marinade: mix soy sauce, mirin, water, and a touch of sugar to create a sweet and savoury bath. Submerge the eggs in this mixture and let them marinate for at least 12 hours, preferably in the refrigerator. 

The eggs absorb the flavours, turning them into a delicious, umami-packed component that elevates any bowl of ramen.

Ingredients and Method

Serves 1


  • 1 packet of instant noodles

  • 700ml vegetable stock

  • 2 tablespoons soy sauce

  • 2 tablespoons dark soy sauce

  • 2 tablespoons brown sugar

  • 1 teaspoon sesame oil

  • 2 cloves garlic, minced

  • 1 small piece ginger, grated

  • 2 marinated chicken thighs, sliced

  • 1 Bok Choi

  • 100g shiitake mushrooms, sliced

  • 2 spring onions, chopped

  • Ramen Eggs (Ajitsuke Tamago)

  • Fresh coriander, for garnish

  • Salt and pepper, to taste


  1. Prepare the Ramen Eggs in advance following the instructions given above.

  2. Take the boneless chicken thighs and marinate them in dark soy sauce, soy sauce, brown sugar, sesame oil, garlic, and ginger.

  3. Put the marinated chicken thighs in the oven and cook until golden and crispy (should take at least 20 minutes so take your time before starting the noodles)

  4. According to the instructions, cook the instant noodles in a pot with chicken stock. We suggest undercooking them just a bit, as they will keep cooking in the broth. You want your noodles to stay warm and not soggy.

  5. Once the noodles and steamy broth have been transferred in a bowl, add the mushrooms and Bok Choi (two leaves should be enough).

  6. Place the slices of chicken thighs alongside the mushrooms and Bok Choi.

  7. Cut the Ramen Egg in half and gently place it near the chicken.

  8. Serve the ramen hot, topped with spring onions and fresh coriander.
